We started brewing mead because we got tired of choosing between wine and beer and wishing something warmer existed in between. Now we make it the old way: with real honey, patient fermentation, and zero shortcuts. Every batch is a little different. That's the point.
It started the way a lot of good things do — with a jar of honey sitting on a kitchen counter and too much time on a Saturday. A friend suggested mead. We laughed. Then we tried it.
The first batch didn't win any awards. The second batch was drinkable. By the fifth, we were handing bottles to anyone who'd listen and asking if they wanted to come help us build something real.
That something real is here now. Celtic Cross Meadery sits on FM-646 in League City, and every drop we produce starts with honey sourced from Texas apiaries, water filtered on-site, and yeast strains we've spent years getting to know. We age everything longer than you'd expect. We bottle everything in-house. And we open our doors because we'd rather talk to you than sell to you.

House Favorite
Our signature mead. Wildflower honey from Central Texas, fermented dry to a crisp finish that still carries the flower's sweetness on the back end. Light, honeyed, and dangerously drinkable.
Buckwheat honey gives this one a deep, molasses-rich base. We age it in oak for extra depth — think toasted walnut, dark fruit, and a whisper of smoke. Best poured slowly on a cool evening.
Seasonal
Orange blossom honey meets a hand-picked infusion of fresh thyme and a touch of raspberries. Floral without being sweet, herbal without being sharp. Our most surprising pour — and the one people come back for.
Heather honey brings a tart, almost tangy backbone that pairs surprisingly well with a slow build of cayenne and ginger. It starts smooth and finishes warm — not for the faint of heart, but perfect for winter.
Half honey, half fresh-pressed Texas apple cider, fermented together until the fruit and flower notes lock into place. Bright, crisp, and easy — the kind of mead you'd drink on a porch and forget it's got backbone.

Selection rotates seasonally. ABV and aging times are approximate — every batch is a living thing. Ask about what's open for tasting this week.
Our tasting room isn't fancy — it's warm, it's got a long wooden bar, and the staff knows the difference between your face and your usual. We pour flights, sell bottles, and occasionally let you watch us rack a batch from the barrel.
